This summer, Bearclaw Cabin will host three Bearclaw Supper Club events, each promising an unforgettable evening of exquisite cuisine, live music, and breathtaking vistas. Nestled atop the majestic Sundance Mountain Resort, Bearclaw Cabin stands as one of Utah’s first mountaintop lodges. Accessible via the Outlaw, Stairway, and Red’s Lifts, this iconic venue offers visitors unparalleled 360-degree views of Heber and Utah Valleys, surrounded by the awe-inspiring Mount Timpanogos.
On July 31st, the Bearclaw Supper Club will present its exclusive Chef’s Tasting Menu. The evening kicks off with a scenic lift ride up the mountain via the Outlaw Express, ensuring guests are treated to stunning landscapes from the very beginning. As the event unfolds from 6 to 9 p.m., attendees will indulge in a culinary journey crafted by Sundance’s talented chefs over multiple courses.
The evening’s menu features an array of unique appetizers, allowing guests to sample a variety of innovative flavors. The artistry of the displayed food creations will captivate both the eyes and the palate, perfectly complemented by the live music that fills the air. As the sun sets and the evening draws to a close, guests will descend the mountain via another scenic lift ride, completing a night of culinary bliss and natural beauty.
Join us for the Supper Club Soiree on August 14th for another evening of delectable dining and stunning views. The menu for the evening features an array of appetizers, including baked brie tartlets, rabbit sausage, Swedish meatball subs, spicy crab waffles, oysters etouffee, and pickled watermelon.
The buffet continues the culinary adventure with a local cheese and charcuterie display complemented by honeycomb, artisan bread and butter, smoked trout flatbread, shrimp lettuce wraps, smoked queso dip, and doner kebab. As the evening progresses, guests can indulge in a variety of desserts, from lemon lavender tartlets and sweet tacos to s’mores, cherry limeade gelee, and hamburger macarons. Each bite is designed to delight and surprise, making for a truly unforgettable dining experience amidst the stunning mountain backdrop.
The Bearclaw Supper Club series concludes with our Family Style Dinner on September 4th. As always, the evening begins with a scenic lift ride, setting the tone for a memorable night. Upon arrival, guests are greeted with a selection of appetizers such as brie and caramelized fig flatbread, mini lobster rolls, and chicken crunch spring rolls. The display features a dipping board loaded with salsa, guacamole, artichoke dip, hummus, melted brie, tapenade, and jalapeno ranch, paired with tortilla chips, pita chips, assorted veggies, olives, mini pretzels, and toast points.
The family-style dinner brings everyone together with starters like antipasto salad, greens and grains, and roasted carrots. The mains include sous vide stuffed pork loin and braised short rib, accompanied by sides of roasted summer squash, toasted quinoa with goat cheese dressing, cacio e pepe potatoes with Grana Padano snow, grilled asparagus with olive oil, and blistered tomatoes with lemon zest and cracked pepper. To conclude the evening, the dessert board offers a captivating spread of orange meringues, mini double chocolate eclairs, lime-raspberry cupcakes, maple-blueberry cannoli, and chocolate cream tartlets.
